Excellent Quality Bottarga
I first discovered Trikalinos bottarga at Dean and Deluca and I fell in love with it. I love fish roes and never tried bottarga before. At that time I only bought a very small amount to try and regretted not buying more since D&D is very far from my home.I went home and searched online and bought a different brand of bottarga from Amazon because it's half the price of T. Although it's good, but it's not the same quality as Trikalinos. The other brand quality was slightly drier than Trikalinos but cheaper. After I finished it, I went back to buying Trikalinos. I bought it in December and just opened it to try. It's as good as I remembered from the one I got from D&D. Very soft, moist, and burst with fresh sea water saltiness. I didn't have any bread at home so just munched on it as snacks. Yes, very expensive snacks but I only ate four thin slices. It's quite salty eating it plain so I will wait for the weekend and go get some toast and wine to go with it.Note: I have also tried bottarga from Taiwan (of course the Taiwanese don't call them bottarga but it's just the same cured grey mullet roes. Taiwan is also famous for their bottarga). The Taiwanese kind is also of good quality but still I prefer T, with texture somewhat slightly under-cured so it isn't as dry as the Taiwanese version of bottarga.PS: I dropped the piece on the floor and cracked the wax which you can see on the pictures. The product came perfect with no cracks.
