Bottarga completely changes and enhances the dish of spaghetti with clams
Spaghetti with clams is not the same without this wonderful product. My husband has perfected the art of cooking it after many attempts, tweaking the method so the spaghetti has RETAINED the flavour of the bottarga when served, and we sprinkle a little on the top. I know he uses a lot of olive oil, it has to be done, to try to recreate what you may have eaten in Sardinia. This is a dinner that I really look forward to with great anticipation. We use 1 kilo of fresh clams for 2 persons, 3/4 to 1 scotch bonnet fresh chilli, flat leaf parsley. Clams can give off water so he adds them 3/4 of way through the cooking of spaghetti once he has assessed the cooking water, as this will have the flavour in it. Perfect with a glass of red wine

Perfect for Spaghetti Alla Bottarga
Bought this to recreate the flavors of Sardinia after a magical trip to Orosei. I've previously bought a whole roe that needed to be grated but found it quite messy. This was a lot easier to cook with. Cook some fresh clams with garlic and shallots and a splash of white wine. Add some chopped fresh tomatoes, parsley and chili flakes. At the end, throw in a spoonful of the bottarga with several glugs of extra virgin olive oil and you'll have simple heaven!
